Pancake mix

Pancakes remain a big favorite of young and old. But certainly for children! During the holidays, with a birthday, at Onze Lieve Vrouw Candlemas (February 2) or just on a weekday: pancakes are always welcome. Do you always make such a delicious old-fashioned stack or do you want to try something different? As an alternative to the classic pancakes, this pancake mix offers a healthy alternative to pancakes that are free from gluten, grains, lactose and casein. The pancakes are packed with good fiber from tubers that ensure good digestion and intestinal flora. It contains a lot of prebiotic fibers that come from the tubers konjac and tapioca, the baobab fruit, coconut and linseed.

There are no refined sugars in these pancakes, but they are sweetened with pure baobab powder. Baobab powder is a pure fruit powder from the fruit of the monkey bread tree or Baobab tree and is rich in fiber and vitamin C.

Chocolate pancake with banana

For this you need: 30 g chopped dark chocolate and 1 banana.
Make the dough as described above, but also add a tablespoon of cocoa powder to the batter. When the top of the pancake is dry, sprinkle it with the chopped chocolate. Put a lid on it and let it rest for a while. Meanwhile, slice half a banana per pancake.
Place the pancake on a plate and place the banana slices on the pancake. Fold loosely in half and enjoy!

Apple-cinnamon pancakes with raisins

In addition to the basic batter, you need for each pancake: 1/3 apple, tsp cinnamon, raisins.

  1. Cut thin slices of the apple with a cheese slicer. The thinner the less thick you have to pour the batter. Stir the cinnamon into the pancake batter.
  2. Heat some coconut oil in the frying pan over medium heat. Place a few slices of apple in a nice pattern in the pan. Bake it lightly brown. Then add a ladle of batter, just enough to seal the apple slices well all around.
  3. When the top of the batter is dry, carefully flip the pancake. Bake for 1 more minute.
  4. When serving, sprinkle the pancake with some raisins.
Pancake with ice cream

Make the basic fitting as described below or watch the video. You also need per pancake: 2 scoops of ice cream and possibly some melted chocolate or chocolate sauce. Fry the pancake as thin as possible. When it’s ready, present it on a plate and fold it in half. Scoop 1 or 2 scoops of ice cream and place them on the pancake. Now fold the pancake in half again. Finish with some melted chocolate or chocolate sauce…



Ingredients for the Treat pancakes

  • 1 sachet pancake mix
  • 4 eggs
  • 600 ml (sparkling) water
  • 30 g melted coconut oil or another oil or fat


Whisk all ingredients in a large bowl until smooth. Heat a frying pan with some coconut oil on a medium heat. Pour in a ladle of batter. Bake the pancakes until the top is dry and shows small bubbles. Then turn over and fry the bottom until golden brown as well.
serve with some fruit, Manuka honey or make a Normandy pancake with some baked apple slices and some cinnamon.
